Cool Summer Treats

Popsicles are the perfect treat to cool down on a hot day. These recipes will not only satisfy your sweet tooth, but leave you feeling guilt free by using simple, healthy, and natural ingredients.

Popsicle molds are ideal for making these treats but paper cups, empty plastic yogurt cups, or even ice trays will due if you’re in a pinch. Luke warms water can be used to separate the popsicle from the molding if need be.

Peanut Butter Cookie Popsicles

  • 3 large bananas
  • ½ cup all natural peanut butter
  • ½ cup unsweetened almond milk
  • 2 tablespoons pure honey
  • ½ teaspoon vanilla extract
  • pinch of salt
  • ½ cup granola

Combine all ingredients in blender and puree until a smooth batter is formed. Pour batter into popsicle molds and freeze for at least 5-6 hours. Retrieve frozen popsicles and remove them from molding. Serve and enjoy!

Key Lime Pie Popsicles

  • 6 key limes
  • 2 ½ cups coconut cream
  • 2 tablespoons pure honey
  • pinch of salt
  • 3 cups crushed graham cracker

Zest limes until you have 2 teaspoons of zest. Juice the limes until you have ¾ a cup of fresh lime juice. Add juice, coconut cream, honey, and pinch of salt to the lime zest and whisk until mixture is thoroughly combined. Pour mixture into popsicle molds and freeze for 5-6 hours. Once frozen, press each side of the popsicle into crushed graham cracker. Serve and enjoy!
