  • Sweet potatoes
  • Beets
  • Butternut Squash
  • Onions
  • Quinoa
  • Mixed greens
  • Rosemary
  • Thyme
  • Sea salt
  • Freshly ground black pepper
  • Olive oil
  • Walnuts (optional)

Maple Balsamic Dressing:

  • 2 cloves garlic
  • 1/2 inch ginger, grated
  • 3/4 cup EVOO
  • 1/4 cup balsamic vinegar
  • 1/8 cup maple syrup
  • 1/8 cup Bragg’s liquid aminos
  • 1 tsp mustard powder
  • pinch salt
  • pinch pepper

Season sweet potatoes, beet, butternut squash and onions (or any assortment of fresh, seasonal veggies) with olive oil, rosemary, thyme, sea salt and pepper.  Roast in 400 degree oven until tender.

Layer bowl with mixed greens, quinoa, and roasted veggies. Sprinkle walnuts (if desired) and drizzle dressing on top.
