The veggie lasagna special at Nourish Cafe is quickly becoming a favorite.  Here’s how you can make your own at home.  Start with a fresh marinara sauce (we’ve included our recipe below, but feel free to use your own!) and fresh zucchini.  You’ll come back to this dish again and again!


  • Fresh zucchini
  • Fresh broccoli
  • Baby spinach
  • Your favorite marinara sauce (our recipe below)
  • Fresh mozzarella
  • Fresh grated parmesan
  • Salt and pepper to tast

Slice zucchini the long way and layer in a lasagna pan (alternating directions). In between each level, layer marinara sauce, mozzarella, grated parmesan, steamed, undercooked broccoli, baby spinach and salt and pepper.  Cover the top layer of zucchini with sauce and grated parmesan cheese.  Bake at 350 degrees until zucchini is tender – about an hour.  Serve and enjoy!

Nourish Marinara

Combine the following and cook to your taste:

  • Diced campari or vine-ripe tomatoes
  • Olive oil
  • 2 bay leaves
  • Italian seasoning
  • Garlic
  • Sea Salt
  • Black Pepper
  • Sugar in the Raw
